In the first part of this journey, I gave you a glimpse about the chefs that have inspired me along the way. We now have more space to do so. I've come across a few individuals from the history whose lives have left a profound impression on me. Bourdain is unquestionably one of them. I knew him before I read Kitchen Confidential, but after I finished it, he became a hero to me. Kitchens are undoubtedly difficult environments. It's important to remember that food has numerous facets, each of which can evoke a unique emotional response in the eater. Making someone's meal is like sending them coded messages. The food will include so many bits of you that you will be naked. And you will be evaluated; people will say "it's a little salty," but what they really mean is "you are a little sloppy." If you work as a chef in a restaurant and take your profession seriously, you should be prepared to be judged by everyone. It takes steel nerves, stability, and obsession. Most of the cooks we've seen up to this point are either stupid enough to not care, have a vast hearth to keep everything in it like Pepin or Julia, or are simply terrible people. Bourdain was unique. He was intelligent, bold, and weak all at the same time. And he was the bad boy of the culinary world.
His culinary journey began with a well-known story. He tasted the raw oyster from the fisherman's boat, and eating something utterly new, unexpected, and shocking changed everything for him. He also became famous by eating strange stuff like unwashed warthog rectum in Namibia. He was that courageous. Anyway, I could go on and on about him and what I learnt from him for hours, but we have things to do. Chefs have three knives most of the time, whereas our mothers had thirty. Going the chef's route, I suppose, is preferable because your knife can become a friend in this manner. You'll feel a connection to it. I have one and enjoy using it to slice onions. Slicing an onion with your chefs knife is precisely like meeting an old friend and venting about all your difficulties while crying. It grabs you.
